For this winter season, our main star is the Winter flounder which is known for its rich fat content and full-bodied flavor, making it a true seasonal delight. The dish "Grilled Flounder with Bouillabaisse Sauce and Winter Vegetables" showcases this exquisite fish, finished with a traditional Marseille bouillabaisse sauce, reflecting the chef’s creativity. Inspired by the Southern French dish pissaladière, the appetizer "Caramelized Onion, Anchovy, and Black Olive Pie" features vibrant colors that evoke the festive spirit of Christmas markets.
